DIY: 4th of July Craft

Can you believe July is just around the corner, already? Well, that was sure fast! But it's one of my favorite holidays, bbq's, camping, fireworks, pic-nics in the park, red, white and blue decorations.

And speaking of Decorations, check out my Patriotic Mantel.

Easiest Banana Bread Recipe Ever!

Here is a quick and super easy Banana Bread recipe for the weekend. Enjoy!
I am no baker, I will be honest, I am no cook. In fact, I am not a big fan of the kitchen, you might say I have kitchen phobia. Seriously, I am always lost whenever I'm in the kitchen, I love kitchens, I love them to death, and one day hope to have a beautiful and big kitchen, but when it comes to cooking, I am not the right person for it. I feel like Lenguini, I wish I had a tiny chef on my head that told me what to do.



So that aside, I found the easiest Banana bread recipe ever!!! on Thifty Decor Chick blog When I say easy, I mean easy! I have never made bread before, it all sounds complicated. The measurements, the ingredients, the timing, the mixing, honestly sounds hard. But this recipe was incredibly easy!!! And So good!

Ingredients


4 riped Bananas
1 Egg
1 1/2 cups of Flour
1 teaspoon of Vanilla
1 teaspoon of Baking Soda
A pinch of Salt
1/3 cup of melted Butter
1 cup of Sugar
A pinch of Cinnamon


First you will need to smash the bananas
Second add the melted butter.

 Third, add the egg, vanilla, and sugar. Mix.


Fourth, you want to add the baking soda, salt and cinnamon. Mix.

 Last, add the flour.


My mother in-law taught me an old fashion trick, if you don't have any pan spray, use butter instead, this way nothing sticks! Works everytime for me.


Add cinnamon on top of bread. For extra yummyness! 
Bake at 375 degrees for 1 hour. Your house will smell divine!!

Gaspacho Salad

Hope everyone had a wonderful Father's Day Weekend, I know I sure did.
I wanted to share the quickest and easiest healthy salad ever!
Perfect for the summer, and not to mention for all you diabetics out there. Trust me, if you are diabetic, or are a health freak, this is the salad to have.

It's called Gaspacho.
A Mexican Cactus Salad, cactus! you say? Well yes, cactus is actually great for diabetes, it helps regulate blood sugar, I did some quick research and found they are high in soluble fiber. That is the same kind in oatmeal, barley and shiratake noodles. It also lowers your glycemic index.

Ingredients




One jar of already cooked and pickled cactus, you may find at any grocer store.
7-10 red raddishes
3 avocadoes
2 tomatoes
1/2 cup of onions
1/2 cup of cilantro
1/2 of lime
You will want to drain the cactus first, than pour in a bowl.
Next you will need to finely chop the ingredients.






Last step, sprinkle the lime juice and mix everything together. And there you have it, serve chill.

Hmm...so good, so healthy, so perfect!

Hmm..home made Asiento with Tlayudas, this is an authentic platter from Oaxaca, Mexico where we are from. It tasted amazing!!! Jealous?


My mom loves details, like mother like daughter right? Love the extra flavor the strawberries gave the lemonade.

Chicken Bread

I found this amazing recipe from blogger Yummy-Healthy-Easy, I decided I wanted to give it a try, but with a twist.



 
Ingredients

4oz of Cream Chesse
2- 8oz Cans of Crecent Rolls Cans
1 Large Chicken Breast (because our chicken was already seasoned and grilled we didn't need any salt or pepper, but if you don't want to grill)
Salt & Pepper

 

First my hubby grilled some chicken, hmm..he is a grill master. Amazing!!
Preheat your oven at 375 degrees.

Than I chopped in tiny squares 1 whole breast.


Than I mixed the chicken with the cream cheese.

Next, you want to take you roll dough and cut it in squares, I did 12 squares, than put the meat on them.


Next you want to fold them like wontons. Pinch the corners together like so.


Than bake for about 12 minutes at 375 degrees.
