Gaspacho Salad

Hope everyone had a wonderful Father's Day Weekend, I know I sure did.
I wanted to share the quickest and easiest healthy salad ever!
Perfect for the summer, and not to mention for all you diabetics out there. Trust me, if you are diabetic, or are a health freak, this is the salad to have.

It's called Gaspacho.
A Mexican Cactus Salad, cactus! you say? Well yes, cactus is actually great for diabetes, it helps regulate blood sugar, I did some quick research and found they are high in soluble fiber. That is the same kind in oatmeal, barley and shiratake noodles. It also lowers your glycemic index.

Ingredients




One jar of already cooked and pickled cactus, you may find at any grocer store.
7-10 red raddishes
3 avocadoes
2 tomatoes
1/2 cup of onions
1/2 cup of cilantro
1/2 of lime
You will want to drain the cactus first, than pour in a bowl.
Next you will need to finely chop the ingredients.






Last step, sprinkle the lime juice and mix everything together. And there you have it, serve chill.

Hmm...so good, so healthy, so perfect!
